一般描述

壳聚糖是一种线性氨基多糖,由大约20％β1,4 -连接的N -乙酰- D -氨基葡萄糖（葡萄糖胺），和大约80％的β1,4 -连接的D -氨基葡萄糖（GlcN）组成，由甲壳素在热碱液中部分脱乙酰准备而成。不溶于水，羧化壳聚糖经羧化处理，溶于水。与多价阴离子形成胶体。形成透明溶液，干燥后可形成透明坚韧的膜。 壳聚糖可用作絮凝剂、蛋白质沉淀剂、包封剂和水增稠剂。
